Dr. Koubaa is a researcher and assistant professor in Process Engineering at the School of Organic and Mineral Chemistry (Compiègne, France). He carried out various postdoctoral research stays at the University of Technology of Compiègne (Compiègne, France), at the University of the State of Ohio (Columbus, Ohio, United States), and at the National School of 'Engineers of Sfax (Sfax, Tunisia). His research mainly focuses on the treatment of plant and microbial biomass by emerging technologies (pulsed electric fields, ultrasound, etc.) for the extraction of compounds of interest, and the improvement of fermentation and preservation conditions. He has more than 90 publications (book, book chapters and scientific articles in peer-reviewed international journals). Dr. Mitri, PhD in Computer and Communication Sciences from the Ecole Polytechnique Fédérale de Lausanne (EPFL), Switzerland, was a postdoctoral fellow at the AS Center for Systems Biology, Harvard University, USA; and also in the Department of Zoology, University of Oxford, UK. Her research has always been at the intersection between the computational sciences and biological evolution. Currently she is the head of Mitri lab, which focus is on the ecology and evolution of simple microbial communities composed of a handful of species in the lab. Dr. Mitri is also tenure-track Assistant Professor at the Department of Fundamental Microbiology, at the University of Lausanne, Switzerland. She has published in several high impact journals. Dr. Louka is a professor of “Industrial Process Engineering”, director of the “Center for Analysis and Research” and responsible of technologies transfer: University-Industry” at the FS-USJ (Saint Joseph University of Beirut). He is also director of the UR “Technology and Valorization of Agro-resources”, director of the “Doctoral School of Science, Engineering and Technology” at USJ. He obtained his PhD in Industrial Process Engineering from University of Technology of Compiègne, Sorbonne Universities, France. His research activities focus mainly, through innovative technologies, on extraction, dehydration, texturizing, sterilization, elimination of mycotoxins from foods and in the implementation of a new process for waste treatment. He has more than 200 publications and 19 patents. His experience in the design of industrial pilots and construction of different industries in France, Africa and Lebanon, makes him an expert in the field.
