OverviewHorseradish, scientifically known as Armoracia rusticana, is a perennial plant that grows in clumps and is used as both a vegetable and a herb. It is mostly cultivated for the pungent, yellow-white roots that have a distinctive flavor and may be used to season a wide variety of foods.
