Boulder is a very healthy place with lots of organic foods. I had to change everything when I found out I am at risk to be a type 2 diabetic. You can eat high end gourmet foods and still control your blood sugar. It can't be processed foods anymore, it has to be protein, whole grains, high fiber foods to slow the rate your blood sugar. You can have bread, potatoes, pasta, but the potato should be sweet potatoes because of the fiber & bread & pasta has to be whole grains. But you still have to have small amounts, not 12 ounces of pasta, but 3 ounces instead, 2 slices of bread & not six. My doctor did tests & my A1C is high & that test is for a six month period, so I am pre diabetic. So everything had to change and the question for me was as a chef for 35 years was how I eat the way have grown so accustom to & be healthy. Because as a diabetic you can't eat processed foods anymore, so then what recipes can you have. This book has 110 recipes that I have developed so I can have high end gourmet food & eat healthy. There 60 million people in the USA alone who are pre diabetic & can change there life by eating healthy. A lot of these people can reverse there condition by eating healthy. Of course anybody will have to continue to eat healthy even after they loose the weight & regain there health. Making healthy food is only part of it, you have to cut back your portions to the size that used to be served in the 1940s & 1950s, not the portions of present day. You have to not eat after 7 pm at night & not eat until breakfast. This really is a life style change for the rest of your life & that's why I made these recipes so myself & anyone who wants to reverse there condition that can reverse there condition can eat healthy Gourmet food. The diabetic diet centers around protein, vegetables, high fiber, whole grains because these foods take your body longer to break down so your blood sugar doesn't rise to quickly. Even people who are on insulin can maintain there health by eating healthy. There are 25 million people on insulin & 60 million that are pre diabetic in the USA & that's about 30 % of the people in the USA. There are so many good healthy choices to choose from & create nice healthy dishes from, fresh fruit, skinless chicken, skinless turkey, fish, shellfish, lean pork, lean lamb, lean beef cuts, lean goat meat.
