Truthfully, I've had my Instant Pot for almost a year and rarely use it because anything I make usually results in a big mess! But Erica's reignited my passion for it. Her recipes have been tested to ensure that they're simple, delicious, and work every time. My favorite is the Chocolate Strawberry Breakfast Quinoa--so delicious! --Liz Falcigno, founder of The Clean Eating Couple (thecleaneatingcouple.com) Finding good pressure cooker recipes that are actually easy and taste good can be a bit of a challenge. So many recipes are written without clear instructions and yield poor results. But the recipes in The Electric Pressure Cooker Cookbook for Two are very clearly written, easy to follow, and most importantly, they are all delicious. This is the perfect cookbook for singles, college students, newlyweds, and retired couples, as the recipes are sized perfectly for them. --Kristen Chidsey, Creator and blogger at A Mind Full Mom (amindfullmom.com)

Every other pressure cooker cookbook makes huge meals, ones the two of us would be eating for a week. Erica Acevedo's cookbook is a godsend for my husband and me, who have no time to cook, but want a homemade dinner. Even my husband, who stays away from cooking, has started using the pressure cooker because, in his words, 'the instructions are so straightforward.' The hardest part has been deciding which is our favorite recipe. --Michele Wallace, Creator and blogger at West via Midwest I LOVE the idea behind The Electric Pressure Cooker Cookbook for Two! Like Erica, it's just us and our fur babies, so this book's concept really resonated with me. It's helped me master the pressure cooker and speed up time in the kitchen. If you love to cook but are sometimes short on time and just want something homemade and tasty, this book has you covered! No matter whether you're keto, vegetarian, Whole 30, Paleo, or following a different diet, Erica has something to meet everyone's needs.--Lara Clevenger, MSH, RDN, LDN, CPT, www.laraclevenger.com and www.theketoqueens.com
