Author Information

John Kennedy is Director of the Birmingham Carbohydrate and Protein Tehcnology Group, School of Chemistry, University of Birmingham. He is Director of Chembiotech laboratories and is also Professor of Applied Chemistry at The North East Wales Institute of higher Education (NEWI). He is a Fellow of the Royal Society of Chemistry, the Institute of Management, the Institute of Food Science and Technology and the Institute of Biology. He is also editor of the journal, Carbohydrate Polymers. Glyn Philips is Chairman of Research Transfer Ltd and a consultant to numerous industrial companies and associations. Formerly Professor in the Department of Chemistry and Applied Chemistry at the University of Salford and Executive Principal of The North East Wales Institute of Higher Education, he is now Chairman of the Food Hydrocolloids Trust and of the Cellucon Trust. Peter Williams is Head of the Multidisciplinary Research and Innovation Centre and the Centre of Expertise in Water Soluble Polymers, and Professor of Polymer and Colloid Chemistry at The North East Wales Institute of Higher Education. Hyoe Hatakeyama is Professor of Appied Physics and Chemistry at the Faculty of Engineering and Graduate School of Engineering, fukui University of Technology, Fukui, Japan.
