After both retiring from their first careers, Dr. Lisa Cowley, a holistic chiropractor and nutritional counselor of 25 years, along with her husband, Victor Westgate, a high school educator of 34 years, moved from Long Island to upstate New York, and asked ""what's now/what next?"" and the answer sprung forth in a second career as small niche farmers raising log-grown shiitake mushrooms. During the off-season, they decided to purchase a Class B Roadtrek and crisscrossed the United States, where they discovered not only the beauty of their country but also the people they met along the way.
