In essence, our food needs to be of a wholesome variety that heals and medicates the body! Stephen DeFelice, who coined the word ""nutraceutical"", describes it as ""any substance that is a food or a part of a food and provides medical or health benefits, including the prevention and treatment of diseases"" (DeFelice, 2002). Plant-based foods are the source of concentration in this book. Each entry briefly examines the rich stores of goodness contained within these foods. This should, in essence, be a part of our culinary journey to include more of these in our dietary regime, be it vegan, vegetarian, or otherwise. A staple high in antioxidants may lower the risk of Cancer, Stroke, Diabetes, Heart Disease, and an array of medical conditions. 'Let food be thy medicine, and medicine be thy food'- Hippocrates. We have been encouraged to eat a rainbow of colours to ensure adequate nutrition. Yet, there is an abundance of black or very dark superfoods rich in nutrients that don't seem to get as much recognition as others. They are richer in antioxidants and thus provide more medicinal properties for the human body. These foods fight against infection and aid in the prevention of many diseases and conditions. Adding them to our diet may greatly improve the health of many people.I have written this book with organic, vegan food education in mind.
