OverviewThis thesis presents the background, the methodology and some applications of the utilization of NMR spectroscopy in lipid science. The basic principles of NMR spectroscopy and its practical implementation for studies of lipids are described. A systematic review of different lipid classes and their structural features is presented. Six applications illustrate different utilization of NMR spectroscopy for the use in lipid science. For example, effect on NMR chemical shifts of solvent systems, control of experimental parameters, combinations of different 1D and 2D experiments to facilitate assignment of signals, the support from other analytical techniques for extensive structural investigations, the use of acetylation as an aid for structural elucidation and use of NMR signals for quantitative determinations are described.
