OverviewEVER WONDERED what Chinese people really eat? Walk into any restaurant in any Chinatown in Britain and you will soon realise there are two menus - one for the non-Chinese, usually in a fancy folder and written in English and another for the Chinese, usually on a plain piece of paper in Mandarin. This book is a guide to these 'off menu' dishes. Kwoklyn Wan is a third generation Chinese chef. His grandfather founded Leicester's first Chinese restaurant in 1962 but, like every other ethnic restaurant in Britain, the owners catered for decidedly British tastes. Yet every day Kwoklyn's family and the rest of the Chinese staff would sit down to an authentic meal served by his aunties: Steamed Egg, Clay Hotpot, Whole Fish and succulent juicy Greens all served with mountains of soft rice. A return to the place of his father's birth in Hong Kong inspired Kwoklyn to write the recipes in this book mainly because you will struggle to find them in restaurants anywhere in the UK. This book was born out of the desire to share my food passion. To truly understand traditional Chinese cookery, its meaning, its story, I will take you on a tour through Chinese Soul Food .
