The Senate Commission on Food Safety organizes scientific meetings on current aspects of major importance to the safety of food, with the aim of reviewing and assessing the state of knowledge in a specific field. Auch wenn die Forschung auf dem Feld der funktionellen Lebensmittel seit dem Symposium fortgeschritten ist, so liefert dieser Band doch einen guten \berblick und einen erheblichen Beitrag zur kritischen Bestandaufnahme und Bewertung des Kenntnisstandes von 2002. Lebensmitteltechnik, Food Medien, 10/04 Der Tagungsband ... fasst die Beitrdge eines internationalen Symposiums zur Sicherheitsbewertung funktioneller Lebensmittel zusammen. Das Symposium wurde im Mai 2002 von der Senatskommission der Deutschen Forschungsgemeinschaft einberufen, um eine kritische Bestandsaufnahme und Bewertung des gegenwdrtigen Erkenntnisstandes durchzuf]hren.
