Eric Knight is an Austin, Texas Native and environmental engineer. Eric and his wife Stacy run Local Leaf LLC, their business of wild-harvesting, brewing, bottling, and selling Yaupon Mate’ tea, made from the only U.S.-native plant naturally containing caffeine. Eric teaches edible/medicinal plant classes at Earth Native Wilderness School, UT’s Ladybird Johnson Wildflower Center, and through his own business, as well as custom edible plant classes.
