Globally, there are many safety concerns emanating from the consumption of food, and are categorized as physical, biological and chemical hazards. This volume explores a number of safety issues pertaining to foods consumed across the globe today. Dr Juliana Kiio is a Lecturer and Researcher at the Department of Food, Nutrition and Dietetics of Kenyatta University, Kenya, having obtained her PhD in Food, Nutrition and Dietetics from the same institution. She holds an MSc in Food Science and Technology and a Postgraduate Diploma in Food and Nutrition from Ghent University, Belgium. Her research interests are food safety, micronutrient deficiencies and food fortification, food security, complementary feeding, and functional foods. She has published a number of journal articles in the area of food safety and nutrition, and is a registered member of the Nutrition Society, UK, the Kenya Nutritionists and Dieticians Institute (KNDI), and the Kenya Association of Food Safety and Protection (KAFSAP).Dr Christine Njuguna is a Lecturer at the Department of Population, Reproductive Health and Community Resource Management of Kenyatta University, Kenya. She holds a PhD and MSc in Community Resource Management from the same institution. Her research interests include youth and development, sustainable livelihoods, food safety and security. She is the Chairperson of the Policy and Legal Issue Committee of the Kenya Association of Food Safety and Protection.
