OverviewGlobally, there are many safety concerns emanating from the consumption of food, and are categorized as physical, biological and chemical hazards. She holds an MSc in Food Science and Technology and a Postgraduate Diploma in Food and Nutrition from Ghent University, Belgium. Her research interests are food safety, micronutrient deficiencies and food fortification, food security, complementary feeding, and functional foods. She has published a number of journal articles in the area of food safety and nutrition, and is a registered member of the Nutrition Society, UK, the Kenya Nutritionists and Dieticians Institute (KNDI), and the Kenya Association of Food Safety and Protection (KAFSAP).Dr Christine Njuguna is a Lecturer at the Department of Population, Reproductive Health and Community Resource Management of Kenyatta University, Kenya.
