OverviewVegetables serve as a crucial source of essential nutrients, including dietary fibers, minerals, vitamins, and antioxidants. The increasing awareness of the significance of vegetables in maintaining human health has led to a rise in their production worldwide. China currently holds the top position globally, producing approximately 237 million tons of vegetables annually. In India, the production of vegetables during the year 2009-10 amounted to around 90 million tons.
