Le crottin de Chavignol est un fromage francais, du nom du village berrichon de Chavignol situe pres de Sancerre, dans le departement du Cher et la region Centre. Il beneficie d'une appellation d'origine controlee depuis 1976. Le crottin de chavignol est un fromage au lait cru a base de lait de chevre, a pate molle a croute fleurie, d'un poids moyen de 60 grammes. Sa periode de degustation optimale s'etale d'avril a septembre apres un affinage de quatre semaines, mais il est aussi excellent de decembre a mars. La production etait de 1 531 tonnes en 1998 (-6,31% depuis 1996) dont 100% au lait cru et 41% en Fermier.
