Professor Aredes-Fernandez is a graduate in the career of Pharmacy and conducted PhD studies at Biochemistry, graduating in 2005. He is currently a research scientist of National Council of Scientific and Technical Research (CONICET-Argentine) and Professor in the General Microbiology course at National University of Tucuman - Argentine. Directs several doctoral theses at the National University of Tucuman. Possesses numerous publications in international peer reviewed journals in basic and applied topics related to microbiology of food and fermented beverages. He specialized in subjects such as the metabolism of nitrogen compounds and the study of biological activities of natural compounds present in fermented beverages such as bioactive peptides and phenolic compounds, including antimicrobial, antioxidant and antihypertensive activities.
