OverviewCan we agree that food is getting pretty expensive? I think so. And what that tells me is that if we've been wasting food, we need to stop. When we toss our leftovers, we're literally throwing away money! Let's take Thanksgiving dinner as an example. What do you do with that turkey carcass? I know that more than a few times, I'd make sandwiches until most of the meat was used up and then toss the carcass - usually with a fair bit of stuffing remaining in the body cavity. The leftover mashed potatoes would go into the compost bin. I also have to admit to sometimes leaving half a can of cranberry sauce in the back of my refrigerator. Food waste following Thanksgiving dinner is just one example. Many of us throw away perfectly good leftovers every day simply because we don't know what we can do with them. Rising food prices have led me to be very reluctant to waste food. I won't even throw away so much as a handful of leftover vegetables - instead, I place them in a freezer container, add to them from time to time, and then use them in a soup stock. I've created more than a few delicious casseroles using little more than leftovers. I'm here to tell you that there are many, many uses for leftovers, and no need at all to waste food.
