When I wake up in the morning, the first thing I smell is the coffee that fills my home. For us, coffee is tradition, coffee is love, a holy drink. I grew up in a house where preparing coffee is a traditional part of the day's routine. I remember waking up each morning to the fresh roast smell of coffee. Grandpa would make it early in the morning, and I would watch him caress the green coffee beans through the roast on a centuries-old iron skillet and then grind and cook them as a best tradition until he had a fine, strong and thick coffee. I will never forget that. Then I realized that me and my love for coffee were connected. When I graduated from the academy about 20 years ago, I opened my first roastery in my basement, and since I am on a developmental journey in the coffee field, my roastery has grown and evolved. Today, we market coffee in commercial quantities to hundreds of cafés and shops. To improve my understanding of coffee, I travel around the world to learn and discover more about coffee. Today, my roastery is located near my house, and I enjoy the smell of coffee all the time. Daniel Ramal, born in 1979, is a coffee roasting expert and specializes in developing blends and consulting for cafes and companies. عندما أستيقظ صباحا ، أول شيء استنشاقه هو رائحة القهوة التي تملأ منزلي. بالنسبة لنا القهوة هي جزء هام من تقاليدنا ، القهوة حب ، القهوة مشروب مقدس. القهوة جزء تقليدي من روتين اليوم يومي في حياتنا. دايما اتذكر عند استيقاظي صباحا على رائحة التحميص الطازجة عبى يد جدي في الصباح الباكر جدا، وتطلعي بشغف الى النتيجة أثناء مشاهدة جدي وهو يحرك ببطء حبوب القهوة الخضراء على مقلاة حديدية عمرها سنوات عده، ثم طحنها وطهيها على أفضل وجه تقليدي حتى الحصول على قهوة لذيذة ، قوية وسميكة لن أنساها أبدًا إلى الأبد ، عندها أدركت أنني وحب القهوة متصلين. عندما تخرجت من تعلمي الأكاديمي قبل حوالي 20 عامًا ، فتحت أول محمصة في القبو السفلي لمنزلي ، ومن ذلك الحين وانا في رحلة تطور في مجال القهوة ، حتى نما المحمص واليوم نقوم بتسويق القهوة بكميات تجارية لمئات المقاهي و محلات. لتحسين فهمي لعالم القهوة ، سافرت كثيرًا حول العالم لتعلم واكتشاف المزيد عن القهوة ، واليوم يقع محمصي بالقرب من منزلي وأستمتع يوميا برائحة القهوة طوال الوقت. دانيال رمال ، مواليد 1979 ، خبير في تحميص القهوة ومتخصص في تطوير الخلطات والاستشاراه للمقاهي والشركات في مجال القهوة.
